“I miss professional kitchens. But I have my freedom here. I can make whatever I want, in my terms of speed. If I'm not feeling like I have to be open at 10, I'm opening at 11...That's probably the joys of running your own place.”

“I think this place, the Barras in general, is like community place […] And you know, people do not rush in here. If someone wants the soup, I'm like 'it's 20 minutes' - 'No worries, I'm going to walk around.' […] You know, it's not like I'm losing clientele because my sausage rolls are half an hour, you know, away.”

“I think it [the rent] is fair. I think, when we started and there was nothing for some of the traders, let's say, we were happy. We were happy with it from the beginning. But for other traders, it might have been a bit hard because there was nothing. People didn't know that this bit is open again. […] The rent hasn't increased. But, the amount of the people coming in did.”

“We're trying to do [work] 11 to 5, Friday, Saturday, Sunday because that's kind of market hours. And we're doing Friday or late Thursday night as my prep time, so I come in there and I'm making my cakes and making sausage rolls if I have enough time. If not, that's what I'm doing on Friday.”

“I do have keys. Most of the traders don't, just I think [the managers] and me myself, we have ... because none of the traders are here during the week. And if they do, they usually contact [the managers].”

“We're not busy enough I think to be open five days a week […] ... even now, if you take a look in the street, you know, we are not a destination ... as I said, this is the East End. In Glaswegians' head, it's [this area] still dodgy. So, you know, we're trying to get rid of this image and prove to people that this is a nice place.”

“It's all about community. And every time, you know, when someone new comes in, like: 'oh, I used to come here as a kid', it's like, 'this is amazing, you're open'. And you know, I think older Glaswegians still remember the good days of Barras.”

“It's [the Barras] like old meets new, I think. And you see this place [BEES], it becomes like a little community. Like, we start knowing each other, we're talking like [about personal life]... honestly, I've got my haircut like two days ago because I met my hairdresser in here, because obviously one of the traders got her haircut [...and] introduced me to this guy, who's apparently on a BBC programme 'Mirror Mirror'. Like, oh my God!”

“Once a week, before we open we go to the market to buy vegetables. So basically my friend [...] every Thursday afternoon [...] goes and picks something which we're not getting from our suppliers. […] stuff that's not available in Tesco, let's say that way, usually is very expensive to any suppliers.”

“What we like about this [space is] we can change the space with the equipment and stuff, yes. The other bit, if we're getting rid of a shop bit, we also can extend or we can make it a seating area. But we don't need it, because our seating area can be here [inside the market]. ”

“When we started talking about here, about the business, you know, we were told that this [a seating area in the market] is a possibility if we want […]. If you're having your soup [in the market, you would say]: 'Oh, I love that chair I'm sitting on, how much does it cost?' […] I can take the money for the chair and later on pass it to someone else whose chair it was.”

“I've never ever seen, like, market like that in my life. […] You know, I worked in proper places: I come, I have my station, I chop my vegetables or grill my meat, and I leave. And now you know, it's just, you're dealing with all these people. And it's nice. And you see, I'm thousands of kilometres [far] from home, and this is my new community. This is the friends I am making, and you know, it's nice. It's different.”

“I have a guy who is coming from time to time for a free cup of coffee because he changed our pipes. […] I was never used to that [...] you know, you pay for everything. And then people say 'yeah, it's fine, I'll just do it for a coffee'. So that's how we do it, like the Barras way.”

“Electricity is included [in the bill]. We don't have gas in here [...] that was a problem with this, we had to actually get an electric cooker... it's not like a professional cooker. It's just the one you would fit in your house. And it's not very powerful, that's why it's hard for me baking sometimes. But you know, you just deal with it.”
